Banana Breakfast Protein Plate

This build-your-own protien breakfast plate will keep you going strong all day long
1 box Simple Mills Banana Muffin Mix
1 Cup Water
2 Tbsp Coconut, Grapeseed, or Vegetable Oil
1 Egg cooked
3 Strips of Bacon, cooked
1/2-3/4 Cup Greek Yogurt
1/4 Cup Granola
1 Cup Fresh Blueberries
PREHEAT oven to 350ºF and grease or paper line a 12 muffin cup tray.
FOLLOW instructions on back of box.
SPOON batter into muffin cups, filling each 2/3 full.
BAKE muffins for 15-20 min. Or until toothpick inserted in the center comes out clean.
COOL muffins completely in pan on rack.
REMOVE muffins from pan and set aside.
COMBINE yogurt, granola, and blueberries into small bowl.
SERVE muffins with a cooked egg, bacon and a side of yogurt parfait.
