Green Salad with Sprouted Seed Falafels

Go green with this gorgeous Green Salad topped with Sprouted Seed Falafels.

Ingredients:

For the Falafels:
1 cup Simple Mills Everything Sprouted Seed Crackers, plus more for garnish
1 small onion
1 1/2 cup fresh parsley
2 garlic cloves
1 15 oz can of white beans, rinsed and drained
3 tbsp lemon juice
1/2 tsp ground cumin
1/4 tsp sea salt, plus more to taste
1/2 tsp black pepper, plus more to taste


For the Dressing:
6 tbsp lemon juice
4 tbsp tahini
2 tbsp water
1/2 cup fresh mint leaves
1 tsp maple syrup
1/2 tsp sea salt, to taste
Ground black pepper, to taste

 

For the Salad:
3 cups mixed greens (arugula, frisée, mustard greens, baby kale, spinach...)
1/2 cup thinly sliced radishes

 

Instructions:

For the Falafels:
PREHEAT oven to 400ºF and line a baking sheet with parchment paper.
ADD Simple Mills Everything Sprouted Seed Crackers, onion, parsley and garlic to a food processor and process until well processed
ADD beans, lemon juice, cumin, sea salt and pepper and process until homogeneous.
TASTE and adjust seasonings.
USING a 1/8 cup, scoop out the mixture and pack into small balls using your hands.
TRANSFER onto the prepared baking sheet and bake for 20 minutes or until golden brown.

For the Dressing:
ADD all ingredients into a mini blender. Blend until smooth.
TASTE and adjust seasonings.
 
For the Salad:
ARRANGE greens and radishes on a large plate, top with falafels and more Simple Mills Everything Sprouted Seed Crackers
DRIZZLE with mint vinaigrette.

Tips:

To make the vinaigrette, you can also use a hand blender.
